These are the best and are pretty darn easy if you get the right ingredients.

Flour Tortillas 8-10
Can of Green Enchilada Sauce
Shredded Cheese your choice colby or jack
Chicken breast 2 or 4 depends on how much meat you want
cream cheese 8 oz.
can of copped green chiles

Boil or (
grill on your george foreman) your chicken breast till done, then shred it up.
In a bowl mix up the cream cheese, the can green chiles, a bit of the shredded cheese and the chicken breast, this is your filling.
Take your flour tortillas and fill with the above filling and roll up place in a baking dish, when you have them all rolled up and in the dish cover with the can of green enchilada sauce and then cover with remaining shredded cheese. place in the oven about 350 degrees for 45 min or so watch them till the cheese is nice and brown and bubbly take out and let set for about 5 to 10 min to set up. Then serve, super great, not spicy but pretty darn tasty and not hard to do and really does not take that long to put together. As a matter of fact it is the easiest meal I have cooked in weeks!
