hmm.
evolution is based on the consumption of nutrients. you are what you eat. i dont know the theme of the paper or the details about acid and proteins. i know enzymes have accelerators, which is suppose to be the spark of life. when i think of evolution, i think of pottengers cats.
http://en.wikipedia.org/wiki/Francis_M._Pottenger,_Jr. i dont support the man as his motives were animal abuse, and i believe are illegal now. but he documented evolution, officially, from life to death.
http://en.wikipedia.org/wiki/Enzyme
Enzymes are proteins that catalyze (i.e., increase the rates of) chemical reactions.[1][2] In enzymatic reactions, the molecules at the beginning of the process are called substrates, and the enzyme converts them into different molecules, called the products.
http://en.wikipedia.org/wiki/Sucrose (sugar ; remember, are what you eat.)
Acidic hydrolysis can be used to convert sucrose into glucose and fructose. But hydrolysis is so slow that solutions of sucrose can sit for years with negligible change. If the enzyme sucrase is added, however, the reaction will proceed rapidly.
note enzyme sucrase (not sucrose) they normally share similar names as the enzymes are paired with what they work with...
